Default The Super Dooper Banana Cup Cake

Dry Ingredience

1 x cup whole meal spelt flour
1 cup mixed Besan flour and Flaxseed flour (optional, mix own flours if desired )
1 tsp Bi Carb
pinch salt
3 level table spoons Natvia
1 tbsp mixed spice and cinomon
1/4 cup shredded coconut

Wet Ingredience

3 large banana's
1/2 cup of milk ( or substitute )
2 eggs
tsp Vanilla essence

Preheat oven to 180 oC

Sift flours in one bowl. add in all dry ingredience and combine well

2nd bowl add eggs, essence and milk. use electric mixer and mix well until froffy to airate

add wet to dry, fold in and pour into moulds/tins

bake for 45 minutes ( for cup cakes )

So I have tried another mix of flour this morning. It comes from a recipe book by Lola Workman Wheat & Gluten Free Home Baking. She uses this standard mix of flour for nearly all her recipes in this book. ( she uses dreaded sugar or castor sugar in her recipes though, so idea's for sure for me to attempt to adjust )

Super fine flour :

200g besan flour
200g potato flour
100g rice flour
150g arrowroot flour

I mixed in a bag and sealed in a container as one source of premixed flour to experiment with.

re did the banana cakes using

one cup super fine flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda

mixed together and sifted

1 1/2 banana's
2 tablespoons Natvia
1 egg
splash milk ( used light soya milk, for no other reason than it was already open)
tsp vanilla extract

electric whizzed wet mix and mixed into flour

added saltana's and shredded coconut, poured 6 cup cakes, baked on 180oC for 30 minutes.

They are defently lighter, fluffy and mmmmnn yum looking. Going to make the Icing the same again, with potato flour, cream cheese and lemon zest. Then off to some lovely people that have offered to test them for me.


Will defently have another version soon with hazelnut meal and almond meal.

Hi there, in chocolate based cakes/muffins you can make with crushed cooked chickpeas or black beans instead of flour. I know that they need to be counted towards carb but they are less carb than refined flours and have more protein. Google chocolate chickpea cake and you will be amazed!!

You can sub sugar sometimes for apple sauce (no sugar added type) but you may need to adjust the other wet ingredients...it's a bit of trial and error reallly...but vegan recipes are good for subbing butter and sugar usually, esp refined sugars.
