Default Beef Stroganoff and Rice Cake

Beef Stroganoff and Rice Cake


Recipe Description
Num! Num! It is fungi season and stroganoff is a welcome seasonal favourite! 
Ingredients:
Small saucepan with tight fitting lid
Cooking spray
Finely slice beef or veal or cut into thin strips
Balsamic vinegar
Finely slice mushrooms
Finely slice onion (I used 1 x shallot)
Finely slice small amount of zucchini so that it is not all mushroom
Salt & Cracked Black Pepper
Herbs for cooking and for garnish (eg your own choice of herbs to cook & dried parsley to garnish)
Pinch of chilli flakes or shake of Tabasco to enhance the flavours
Boiling water
Mayonnaise
Rice Cake 
Preparation Steps:
Get all ingredients together
Cook
Eat

Cohen's appropriate 
Instructions:
Spray saucepan. Brown the meat lightly but well. It is the browning which gives the flavour
Add Balsamic, cook until the vinegar bubbles and reduces a bit (about 5 minutes)
Put in all vegetable and flavouring ingredients, mix about in the saucepan until well coated with browned pan juices and you can smell the fragrance from the herbs
Pour boiling water in to cover (be generous but this is not soup!), stir, cover with lid for about 15 minutes. Turn off heat and let stand for a few minutes
Stir in mayonnaise, pour stroganoff over the rice cake in shallow bowl.
Eat with a soup spoon so that you can get all the lovely soupy goodness down to the last lick!

Num! Num! I had run out of chicken & Salada and how amaze me! Had this most delicious dinner from 'finding' some meat in the freezer and some rice cakes in the pantry!

this sounds awesome. which herbs would go good with it apart from paprika?
when i make it i might blend some tomatoes with it too.
does the ricecake end up being like rice?

Thanks for looking by.

I used a dried oregano mix which suits my taste for now, but if you add paprika (yum) then you would also have created a Goulash (double yum!)

Beef and mushrooms really are a classic, and I like to have lots of flavour in my food, and even 1 x person servings can be very yummy

I really like the rice cakes as 'rice'. They are simply steamed rice, pressed into cakes. A bit like unflavoured rice bubbles, and I find that the rice cakes go well in soups (the rice bubbles float) and under savoury meals which have plenty of sauce

They are not as successful when used, for example, as a pizza base which needs a salty base such as Salada, or as a crispbread with a steak 'n' salad meal - they are then far too bland! But with soups and stews, the rice cakes really shine.


Recipes on this board are always interesting - because every person modifies according to their taste or to what they have on hand. We really are an inventive lot!

Thanks for the suggestion of paprika and tomato. Today's Stroganoff is already cooked and waiting for me to eat for Meal #3, but I think I will be having Hungarian Goulash tomorrow!

Made this for dinner tonight, just had with crackers, was yummo!
Has anyone tried it frozen and reheated?
