Default Tofu - how do you cook it Cohen style?

I'd appreciate any ideas on how to use the tofu allowance.

this is how I cook ToFu:

Use silken Tofu - it is unhardened
grate zucchini and finely chop tomato and cabbage to allowance

mix well with tofu. Add pepper if desired. Microwave 2 -3 minutes.

Crush one crispbread and mix it in the top of the pie. Microwave for 30 secs or place under grill one minute.

Yummy Tofu cottage pie!

thanks meagain, sounds yummy. I haven't made it into the 21st century yet and don't have a microwave - so do you suggest oven or stove top as an alternative?

I know, it is hard sometimes - but will look into getting one soon. In the meantime, I will try oven. Thanks again.

I use the Organic firm tofu and slice it thinly, then stir fry it with some taco seasoning in a frypan with Canola spray.. I add some spinach, zucchini and tomatoes, mushrooms or whatever veggies from your allowance.. if you don't want to use taco seasoning try sprinkling some garlic powder and balsamic vinegar on it then add a tiny bit of water as well.. To finish it off, I break up some of my salada crackers and sprinkle them on top before eating it. They add some crunch.. Very Yummy..

Slightly off topic but Jeannie, I thought taco seasoning wasn't allowed?
I make my own version using ground coriander, cumin, paprika, salt and garlic granules (tastes the same!)

Thanks for the ideas Jeannie and meagain, I was wondering what to do with my tofu too. I used to love it in laksa, but obviously not any more! heh.

Yep you are right MamaK, the bought taco seasoning is not allowed.. you can make your own though with spices that are allowed and that you like.. Yours sound great, I will try your version... thanks...

I love tofu I just wished there were more recipes that were Cohen friendly.. although I reckon any of the meat recipes would be ok just being subsituted with tofu.. especially the chicken ones.. hmmmm I will have to try some.. right now I am going to try Debs muffins for tomorrows breakfast.... :P

Yeah Jeannie I was hoping there would be some more tofu ideas in the recipes we got in our program. Might go sniffing around the web to see what I can find.

One thing I have done is used the softer silken tofu and mixed it up to make a dip. Added garlic granules and other spices, a bit of finely chopped onion, tomato, celery, capsicum, and had it with crackers. For a diehard 'dip and crackers' fan like me, it was pretty good!

oooh so many options. I can't wait to use it. Although my program says that I can have it, it doesn;t state how much I can have. So I am impatiently waiting to hear back from the clinic about the quantity so that I can start using the tofu I bought this week. keep the recipes comiing, I am starting to feel like I can't look at another 'meat' meal and it is only week 2. The weight is dropping off me (lost about 7 kilos so far ), so that is the incentive to have another meat meal. ahhhh.
