Mango Chicken on a warm bed of Coslaw
Ingredients: All from your allowance Chicken Breast Mango Cabbage (soft like chinese cabbage) Low fat Mayo Balsamic vinegar Chinese crackers (2 servings) Cut chicken lenght wise in two, this will give you 2 pieces of chicken instead of 1. Grill on BBQ to your desire taste. Put a side. Cut your Chinese cabbage in thin long slices and cook on high heat for 1-2 minutes keeping the cabbage crisp. I love cooking in a wok because you can add only water if it is sticking, no need for non stick spray. Take out of heat, add salt, herbs and non fat mayo. Lay your bed of cabbage on a serving plate, add your 2 pieces of chicken on top/middle and sprinkle chicken with balsamic vinegar. Cut your mango in 6-8 long pieces without skin and put fruit around chicken, servce with chineese crackers. Yummy for my tummy!
