Default Jenny’s Recipes 4 Andy and Everyone on Cohen's

Since starting this journey with Cohen's I could not have been so successful with out the %100 commitment of my wife of 25 years who has prepared and cooked almost all my meals.
Through her cooking I have not become sick of the food and I have not deviated - not even once.

With her planning and presentation and efforts of watching the clock and supporting me %110 - through the good days and the few moody days - I have achieved more than I ever thought possible and will achieve much much more.

I still have a long way to go but thought I would add and share her recipes that she has adapted and created specially for me so that it helps every one on the same road.

Hopefully they will benefit many more as much as they have for me.

Remember all quantity’s to suit YOUR allowances as per total meal allowance for your plan. After cooking yours first to your plan - increase quantity for all the family to enjoy the good healthy meal!!!!!!!

Jenny’s Warm Chicken Salad

Chicken {allowance}
Salt
Pepper
50 ml’s diet ginger ale
1 teaspoon mayonnaise
Garlic infused olive oil spray

Salad
Fresh spinach leaves {allowance}
Tomato
Celery
Green Capsicum.

Dice tomato, celery and capsicum and mix together then add to spinach.
Spray fry pan with oil. Fry chicken with the lid on for a few minutes then remove lid and fry till juices turn brown. Then add diet ginger ale stirring till reduced by half then add mayonnaise. Pour hot over salad and toss altogether.

Cauliflower and Feta Cheese Soup

Cauliflower {allowance}
Onion (no more than two table spoons per day)
Celery
Garlic powder
Salt
Pepper
Feta cheese {allowance}
Olive oil spray
300 mil’s of water


Lightly spray saucepan with olive oil and fry onion. Then add cauliflower, celery, garlic powder, pepper, and a small amount of salt {feta cheese is salty} and the water. Simmer till vegetables tender. Then wiz all together then crumble in feta cheese and wiz again. Test to taste for saltiness prior to salting !!!!

Oh, thanks Andy... you've just solved my dilemma with Melbourne Cup yummies. The warm chicken salad reads scrumptious Just now have to work out what to do about drinks!!!

I feel bad too, I've been rather plain and boring with our foods and not really trying, hubby's not complaining though. This will definitely help more with meal planning. Thank you I'll definitely be checking back to this thread for more yummy ideas.

Asparagus and Feta Cheese Soup

Fresh asparagus {allowance}
Onion (two table spoons per day only)
Zucchini
Garlic powder to taste
Salt
Pepper
Garlic infused olive oil
300 mil’s of water
Feta cheese {allowance}


Dice vegetables
Fry onion and garlic powder then add asparagus, zucchini, salt and pepper {go easy on the salt} then add water. Simmer till vegetables are tender.
Wiz together with blender then add feta and wiz again.

REMEMBER – One teaspoon collectively of all condiments and herbs per day.

Tomato Onion and Cheese Breakfast

Tomato {allowance}
Onion (no more than daily allowances)
Salt
Pepper
1 Tablespoon of water
Mozzarella cheese {allowance} – Not Packet Grated – whole snowman package only.
Olive oil spray


Boil tomato, onion, salt, pepper and water together until tender.
Add a little more water if needed to keep moist.
Spray oven proof dish with oil then spread tomato mixture on the bottom then top with chopped or grated mozzarella cheese and grill till brown on top in Easy Cook oven or in normal oven at 200 until brown.

Fresh Tuna Rissoles

Fresh Tuna {allowance}
50 gram’s of onion, tomato & celery combined to mx into tuna.
Sprig of parsley
Garlic powder
Salt
Pepper
30 ml’s Diet lemon
1 teaspoon mayonnaise
Olive oil spray


Lettuce {made up of the rest of your vegetable allowance}
Tomato
Green Capsicum


Arrange lettuce, tomato and capsicum on a plate.
Whiz tuna and other ingredients in food processor or finely chop and mix together.
Heat fry pan with 3 egg rings in it and spray with olive oil when *hot* then add tuna mix to the 3 egg rings.
Smooth the top with the back of the spoon then spray with olive oil so they won’t stick to the pan when you turn them over.

Serve with salad when cooked.

[color=red]*Hint : With egg rings always make sure they are oiled and hot before you put eggs or anything else in them. If they are hot no food will stick to the egg rings. They will then come away clean.

I haven't "done" Cohens - Asy knows me from way back - she invited me to "take a look" here - I did, loved it, and stayed...
And me? I'm a tall skinny-ish bloke (BMI ~25.5) and have been this way forever, so I haven't faced (weight-wise) what you all have !!

Zucchini and Spinach Mini Quiche’s


Grated zucchini {allowance}
Spinach chopped
1 egg
Salt
Pepper
1 Tablespoon of water
Olive oil spray


Whisk egg, water, salt and pepper together then add vegetables.
Spray mini muffin tin with olive oil. ( I use 12 silicone bend n bake mini cup moulds in a mini muffin tin tray very lightly sprayed)
Spoon into mini muffin tin (or mini moulds) and bake for 15 to 20 minutes on 200 degrees.

Hi Andy,

Thankyou......Your recipes couldn't have come at a better time.

I had this huge can of tuna to use and I am sick of it just with salad. It's sooooo much to chomp thru and must say tuna is a bit dry.

So I logged o today and thought I' d have a look and see if anybody has ever posted a tuna recipe and bingo there it was your tuna rissole recipe. YUM YUM..... I made them for lunch .Very tasty and hats off to your wife with her creative cooking.

I sure will try some others during the week.
