Default Feta and Cauliflower Soup

Feta and Cauliflower Soup


Recipe Description
There was an old post with this recipe but I thought it deserved its own thread as it really is the BEST soup and TREAT. Works just as well with Zucchini. 
Ingredients:
Cauliflower (allowance)
Curry powder
Feta Cheese (allowance) 
Preparation Steps:
 
Level of Difficulty:
Easy 
Time Needed:
20min 
Serves:
Instructions:
Boil Cauliflower and Curry powder until Cauliflower is soft
Strain Cauliflower (save the water)
Add Feta and use hand blender, slowly add water back in until you're happy with the consistancy (thick or thin)

I agree with hexi. It's my treat for the week. I prefer mine without the curry powder, but plenty of black pepper.

And I add celery and garlic and onion to mine and sometimes capsicum for an extra zing!

But I agree ... it's the best!

Hi all,
I made chicken & cauli soup last night for tea, was YUMBO.
Bolied chick breast (allowance)
in water with garlic, salt pepper, little curry powder to taste.
Half cauli, half zuchinni(allowance). Boil all together, blend well I use my hand stick blender. Add more water if needed I started with about 1 half cups.
When cooked i cruched up 1 cracker, I used salada, this swells and bulks up the soup & thickens it. Loved it hope you do to.

Hexi.. I made this for the first time yesterday, me & my girl had it for lunch.. she couldn't believe how yummy it was.. very, VERY yummy!!!

I would like to make this for lunch tomorrow, and was wondering if the cauli is blended with the feta, or you blend the feta with the water & then put the cooked cauli back in???

I blend the feta, cauli and some of the cauli cooking water and make a nice, smooth soup, Prancy.

Mmmmm, thanks AJ. I can't wait for lunch tomorrow. My hubby just went to the shop and bought me the feta & cauli. I tend to get into a rut with food and eat the same thing day in & day out. I have decided to read this part of the forum to get some new ideas & make it my goal to try something new each week.

I like it with plenty of pepper ground over it. Hexi likes curry added, Connie adds all sorts of things. Shax says that feta and tinned asparagus is even better.

Hi all,
I initially had my doubts about the feta and cauli soup but am willing to give anything a go at least once..... mmmmm will certaintly have again and experiment further witht he soup recipees. I froze mine with the craskers in it and took it to work, tasted suprisingly heaps better then the smell when actually making it.

This is yummo. I did have it for lunch. I put in some garlic as well, which added to the flavour. I also used my cracker allowance & dunked them in the soup. Yummy.

Tried the feta and cauliflower soup and it was awesome. Tried it with broccoli also and used riccota ( allowance ) instead of feta. Equally yummy.

Liz..

I think you should read your program again (you are doing Cohen's right?.. just thought I'd double check on that because you never know).. broccoli is NOT allowed while on the program..

I just finished my feta, cauli and celery soup... and it was delicious!!!
This will definitely become a weekly favourite!!!

Oh yes this is BY FAR still the best!

2008 Cohen's Graduate (lost 37.9kg) finished @ 57.5kg
2010 Cohen's Graduate (lost 16kg) finished at 58kg
Mind~body~spirit approach is my winning formula

Goal 1: Under 80kg (done 4.5.13) Goal 2 - 75kg, Goal 3 Under 70kg, Goal 4 - normal BMI 65.8kg!! Goal 4 - final goal 65 - 62kg and start refeed

I made some yesterday. I have modified the recipe a bit, now make it in larger quantities and add some butter and flour to thicken it a little, but still love the soup. It was my weekly treat while I was on the diet.

Just bumping this at it seems to be a very popular yet easy to make soup. With the Southern Hemisphere heading into Winter I think the soup recipes will become popular again.
