Baked ricotta
ricotta (allowance) 1/2 clove of garlic, crushed (weigh with allowance) onion, diced (weigh with allowance) baby spinach leaves approx 6, chopped finely (weigh with allowance) pinch of babytime's italian herb mix salt and pepper 2 crackers and celery and tomato (rest of allowance) Preheat oven to 180 degress Spray a pan with olive oil spray, cook onion and garlic until translucent add baby spinach and herbs cook approx 1 minute. Remove from heat and allow to cool Mix ricotta, onion mixture and salt and pepper together. Spray one muffin tin with olive oil spray. Press mixture firmly into muffin tin. Bake for 30-40 minutes til golden. Serve warm with celery, tomato and crackers. YUM Babytimes italian spice mix Dried Italian Spice Mix 2 TBS basil 1 TBS garlic powder 1 TBS marjoram leaves 1 TBS oregano powder 1 TBS parsley leaves 1 tsp thyme leaves 1 tsp white pepper 1/2 tsp salt store in a cool dark place |

Oh WOW makemeover...This sounds so good. I have made the Baked Ricotta before and i thought that was nice, now I cant wait to add the onion and garlic now. Thanks for the recipe.
