Green Chicken Curry
INGREDIENTS Chicken thighs (cut into cubes) Brocolli Cauli Carrots Curry Paste (I use Mae Ploy which is from Thailand and has no nasties in it only herbs and spices) Water (you could use coconut milk if you wanted but I haven't checked out what it is like in regards to carb count - so to be on the safe side I use water) METHOD Fry up thigh pieces til brown Add curry paste according to taste Add water and vegies Slow cook in frypan with lid

I know its not quite the same as coconut milk, but a dash of natural youghurt works ok too
