Something super quick and easy with ricotta is steam the cauliflower with a little garlic flakes and simply serve with the ricotta on top. Delish and super quick and easy. I did it for lunch when it was warmer.
For mozzarella my fave is "the cohens pizza" chopped capsicum, onion tomato, mixed herbs etc. fry the veggies then lay the sliced mozzarella into the pan and place under the grill. I then like to transfer it onto a Ryvita. Yum!! That's my Friday night special And last but not least- my once a week meal is my tomato fetta bruschetta (recipe is in the recipes thread). Divine! ... Can you tell I love cheese... Lol |

I havent used Ricotta since week 1 and i even make the Ricotta cheese cake from the book - wasnt sooo good :/
Mozarella best dish for me is frying up sliced asapargus, garlic and onion then adding my cheese to the pan until it fully melts. Pour this onto my 4 cracker squares, add a few slices of tomato on top with pepper and grill until turns brown. I used to be obsessed with cheesy couliflower in the first month too ( recipe in the cohen book) also very good

Gahhh damn all this talk of cheese. I succumbed and had my pizza meal tonight. What will I have for dinner on Friday night now?!?! Lol

I like stuffed mushrooms with ricotta.
Get a large portobello mushroom, cook it gently on the fry pan till half way cooked, take it off the heat and put it to the side. Then chop up some chilli and spinach with the remaining veggie allowance and lightly fry the chilli in the pan till soft and then stir the chilli and spinach through the ricotta. Stuff the top of the portobello mushroom with the mix and pop it under the grill for 8-10 minutes or until the ricotta goes slightly brown on top.... Yum! Also love my mozzarella cheese! I just get whatever scraps of veggies I have and grill the cheese over the top. Any combo seems to work for me! |
