Default Whole Wheat Carrot Pancakes

Ingredients:
¼ cup whole wheat flour
¼ tsp baking soda
1 pack splenda
1 egg white
50 ml low fat milk
¼ tsp. vanilla
cinnamon, nutmeg, ginger powder
orange zest
50g blueberries – marinate in freshly squeezed orange juice

1. Mix flour, baking soda, and splenda, cinnamon, nutmeg in bowl.
2. Mix milk, egg, and vanilla in another bowl.
3. Add milk mixture to flour mixture. DO NOT OVER MIX.
4. Add blueberries and orange zest. DO NOT OVER MIX!
5. Heat pan and spray with PAM.
6. Using the 1/4 measuring cup, scoop the pancake batter into the pan.
7. Cook for 1-2 minutes or til tiny bubbles form on the surface.
8. Flip and cook on the other side

I ate mine with ricotta instead of syrup!

thanks. I should have been able to work that one out actually, if I had thought about it!! dahhhhhh
Knew there must have been an original recipe out there but couldn't find it. I have never gone back to eating bread or any flour based products since going off my original plan, but very very occasionaly it is nice to have a little "treat". The carb thing sends my body into an eating frenzy so I am better off just sticking to Cohen "friendly" food most of the time.
