Belnatjas' Guilt-Free Baked Cheesecake


Recipe Description
Great Maintenance dessert recipe. This is a firm and creamy cheesecake. 
Ingredients:
750g reduced fat ricotta cheese (a wedge from the deli is best)
100g gingernut biscuits
125g low fat cream cheese
1/2 cup caster sugar (can reduce this amount and/or use sugar substitute if you prefer)
1 teaspoon vanilla extract
2 eggs
1 egg white (save the yolk and mix it with your crushed biscuits)
1/2 cup thick plain yoghurt
2 tablespoons cornflour
250g frozen berries (optional) 
Preparation Steps:
Preheat oven to 150 degrees.
Grease and line a 6cm deep, 20cm (base) springform cake pan.
In a microwave safe bowl, place frozen berries, cover and cook for approx 3-4 minutes.

20 - 30 mins 
Serves:
12 
Instructions:
Put biscuits into a food processor until they look like breadcrumbs in texture. Add egg yolk and pulse to blend.
Place crumb mixture into prepared tin and press out over base evenly.
Using a hand beater, beat ricotta, cream cheese sugar and vanilla in a large bowl until smooth and creamy.
Combine eggs and egg white together in a separate bowl and then slowly add to cheese mixture, beating on low speed to combine. Add yoghurt and cornflour. Mix well.
Add cooked berries (drained of excess liquid) and stir through. Gently pour cheese mixture over the biscuit base. Smooth top.
Bake for 75 - 90 minutes or until a skewer inserted into the centre comes out clean (the centre may still be a bit wobblyurn off oven and open door. Allow cake to cool completely in the oven. Refrigerate for 4 hours. Release cake pan and transfer to a serving platter.
NOTE: to cover any splits in top of cake, you can add a topping:
125g reduced fat ricotta chese
1 tablespoon caster sugar
1/4 teaspoon vanilla extract
Using an electric hand mixer, beat ricotta, sugar and vanilla in a bowl until smooth and creamy. Spread over cheesecake, and then drizzle with extra cooked berries.
Variation: You can omit the berries and substitute passionfruit for a tasty alternative

I embarked on the Cohen journey in Jan 2010 and lost about 13.2kg in three months or so. I mostly kept the weight off since until recently due to immense stress and grieving. Here I am once again on August 2018, older, wiser and heavier...
