Thumbs up Rum and Raisin Baked Cheesecake

Ingredients

1/3 cup dark rum
1 cup raisins, chopped
250g pkt Arnott's Granita biscuits
100g unsalted butter, melted
750g cream cheese, at room temperature
1/3 cup caster sugar
1tsp vanilla extract
2 eggs
1 Tbsp plain flour


Method
  1. Grease a 22cm round springform pan (base 20cm). Line base and side with baking paper.
  2. Place rum in a saucepan and bring to the boil. Add raisins. Remove from heat and let cool.
  3. Process chopped biscuits in a food processor until finely crushed. Add butter. Process until combined. Press over base and up side of prepared pan. Refrigerate for 15 minutes.
  4. Beat cream cheese, sugar and vanilla in a medium bowl with an electric mixer until smooth. Beat in eggs, one at a time until combined. Stir in flour and rum mixture. Pour into prepared base.
  5. Cook in a moderately slow oven (160C) for about 50 to 55 minutes or until just set. Turn off oven and cool with door ajar. Refrigerate for several hours or overnight.
  6. Serve cheesecake with strawberries and whipped cream. (Optional)
