Lightbulb Making "Rice"

I stumbled across this earlier: http://lowcarbdiets.about.com/od/low.../caulirice.htm

And was wondering if anyone has tried it?? It looks promising and pretty easy!
I've tried cauli 'mashed potato' before, but never rice...!

I'll give it a whirl with my veg allowance tonight, maybe with some savoury mince and see how it goes and report back!

Was just curious if anyone had tried it....

I made it tonight too. I grated the cauliflower (about 1/2 veg allowance) and micowaved it for about 2mins in covered microwave safe container.

Then I made a savoury mince dish using mince and tomato/onion/fresh garlic/zucchini for remaining veg allowance. Simmered it with water slowly for awhile with some italian herbs and a bay leaf. Served it with the cauli-rice and OMG it was one of, if not THE, best dinner I've had since I started.

Yay, I shall be cauli-rice-experimenting more I think!

I am interested in trying this! I love a bit of cauli and I enjoy a bit of a juicy meal! Does the cauli soak up any juice?

Oh and also, when you cook it (the cauli) does it get smaller? Or does it seem like a decent amount?

Thanks

xoxo

Heya Missy, it didn't shrink at all and looked just like a serve of rice. Rather than having one small hunk of cauli it felt like more! Was very filling and tasty. It didn't really sop up the juices, I placed it on top so it wouldn't get 'gluggy' and then I was scooping up some of the 'rice' and some of the juice and it was delicious!

How awesome is cauliflower??? I just found this link too (for those on maintainance) http://cleochatra.blogspot.com/2009/...uliflower.html

I am totalllyyyy going to try that when I'm done!!

Just so you get an idea of portions...I took pics of my lunch

One is the amount of cauli I started with (about 50g). The other is the raw grated cauli. And the last is the cooked cauli-rice served up with my yummy chicken curry.

I'm lovinggggg caulirice!!! I used to just have a few hunks of cauli in my curry...I liked it so much better this way

I'm obsessed

Here's dinner - savoury mince with 'rice' - smaller portion of the cauli this time because I used the big meat portion with smaller veg portion.

So yummy and filling....mmmMMMmmmmm.

Haha, I've now had it with every non-breakky meal since I discovered it!
I wanna try it with a beef stroganoff type dish next week (already cooked the rest of this week's meals, boo!)....yummmm!

Just a hint, it's probably easy to grate a bunch up, then weigh it once grated. Otherwise you may lose a few grams, it tend to fly a bit and get stuck in the grater a little. I grated about 200g this morning, then portioned that out into 50g bags. Ready to go!

First time I weighed my cauli, then grated, and spent ages making sure I didn't miss a single speck of it haha
