Default Cheese: Zucchini, Capsicum & Cottage Cheese Fritters

NYF Cohen's Recipe
Main Protein
Cheese
Recipe Name:
Zucchini, Capsicum & Cottage Cheese Fritters
Recipe Description
A great alternate for brekkie when you are getting bored with eggs and yoghurt.
Ingredients
Zucchini
Capsicum
Onion
Crackers x 2
Garlic Granules
Chilli dried
Oregano dried
Salt
Black Pepper
Instructions
Weigh cottage cheese allowance.
Grate zucchini and squeeze out excess moisture. Finely dice onion and capsicum. Grind crackers into breadcrumbs. Fold all ingredients in a bowl, adding herbs and spices. I formed mixture into 4 small balls that I slightly flattened into a fritter shape. Lightly fry. The cottage cheese melts and is devine. I served with a splash of balsamic vinegar.

Sounds great. I will try this one once I get some cottage cheese. I presume its the non-fat cottage cheese that you used.

Oh yummmm that sounds delicious.... done my normal thing and emailed it to my husband....he is the cook in my house so any good recipes he needs to see

I had these this morning for brekky. Yum! I did have a bit of trouble with them sticking in my scan pan so had to add a little more oil when I flipped them over but..............wow, nice change for brekky. Thanks so much for your culinary initiative!
