Cottage Cheese Salad

Recipe Description

Quick and easy yummy cold salad 

Ingredients:

Cottage cheese (allowance)
1/2 tomato (Roma's sweet and great with this)
Celery (balance of allowance after tomato
Balsamic vinegar (I use a spritzer) 

Preparation Steps:

Weigh out your cottage cheese allowance.
Cut tomato in half.
Weigh out remainder of your vege allowance in celery (I usually peel away the stringy threads before weighing - makes eating more enjoyable).

Serves:

1 

Instructions:

Chop tomato into very small pieces.
Chop celery very finely.
Combine tomato and celery with cottage cheese.
Spritz on balsamic vinegar.
(Doesn't need salt & pepper, but can be used).
