Default Collie's Baked Cheesecake - Cohen's friendly in maintenance

COLLIE’S BAKED CHEESECAKE

Ingredients:

-250g plain biscuits (I use milk arrowroots, but you can use golliwogs to makes choc base, gingernuts for ginger base, teddy bear bikkies, marie bikkies, malt-o-milk, morning coffee etc)
-125g melted butter
-4 eggs
-3/4 cup stevia
-500g cream cheese (Resist buying spreadable, it goes runny and get the cheese softened first by taking it out of the fridge a few hours before you cook)
-1 tablespoon vanilla extract (actually use as much as you like, depends on your taste, I probably use more!!!)

Method:

The base:
- Process bikkies until fine.
- Add butter, process until combined.
- Press mixture over base of a 20cm springform tin. - Refrigerate for 20 mins.

Preheat oven to 160 deg C for conventional, 140 deg C for fan forced.

The filling:
- Beat eggs and stevia in bowl with electric mixer until thick and creamy.
- Beat cheese and vanilla in medium bowl with electric mixer until smooth.
- Add egg mixture to cheese mixture;
- Beat until combined.
- Pour mixture into tin.

Finishing:
- Bake cheesecake for about 50 mins.
- Cool in oven with door ajar.
- Refrigerate cheesecake for 3 hours or overnight.

Notes:
If I'm making a cheesecake slice (which I do quite regularly) then I double this recipe. Seems like a lot of eggs and cheese, but doubling it fits really nicely into a slice tin, assuming you haven't got one of those skimpy tupperware ones. The normal bakers secret ones from woollies are great. If you double it though, you need to extend the cooking time. Can't really remember what I do there but I do check it with a skewer to see if it comes out clean and the eggs look set.
What's great about this one is that it fits all the criteria, and has no flour at all, and mixes proteins through with cheese and eggs.
I have also often sprinkled cocoa over the top as a ‘garnish’ to make it look pretty, but that would be at your own discretion.
