Default Triple-Vanilla Baked Cheesecake

I mentioned this in a recent post and the recipe has been requested so here it is. No crust, lots of protein and not a lot of sugar. I haven't tried it because I'm not on maintenance yet but you can bet I'll be baking it as soon as a finish refeed!

1 vanilla bean
500g cream cheese
1kg ricotta
2 eggs
1 cup Greek-style yoghurt
1/2 cup vanilla sugar
1 tsp vanilla essence
2 TBS cornflour
2 TBS plain flour
60g butter, melted, cooled

Preheat the oven to 150 C. Line the base and sides of a 23 cm springform pan with baking paper and place the pan on an oven tray.
Split the vanilla bean in 1/2 lengthways, scrape out the seeds with the tip of a knife and put aside.
Beat cream cheese in a large bowl until smooth, beat in the ricotta until combined, then the eggs one at a time. Add yoghurt, vanilla sugar, vanilla essence and vanilla seeds, beat until combined. Sprinkle flours and buter over the mixture, beat until combined.
Pour mixture into pan, bake for about an hour or until cheesecake is slightly soft in the centre. Turn oven off, cool cheesecake in the oven with the door ajar. Refrigerate for a couple of hours before serving with fresh fruit if desired. Cut cheesecake with a hot knife, wiping the blade between each cut.

Yep 1kg of ricotta, that's what the recipe says. As I said I haven't made it but I like the sound of it...lots of protein!

This is a chocolate cheesecake I actually call a Triple Chocolate And Vanilla Cheesecake. It has an Oreo crust and uses melted chocolate chips in the cake and also to make the glaze.I have seen people really enjoy cheesecake recipes before, but this cheesecake really flies off the dessert tray at the restaurant!

This is a REAL treat!! I have tried it and it is sooooooo delicious. A bit expensive though, as the 1 kg of low fat ricotta cost me over $8 at Woolworths, the vanilla bean over $5 and then you have the 2 packets of reduced fat cream cheese on top of that! I also substituted the small amount of sugar with xylitol artificial sugar just to eliminate all of the nasties! Then, I froze the leftovers and when I thawed out the cake it was just fine. I thought it was a good idea to try out some of the things that I might go ape on if we went out somewhere and then, because I can have some at home, I may not be tempted to eat resturaunt cheese-cake that still has all the nasties in it. Just a mental thing with me that seems to be working. I can have this one anytime at home and not feel guilty about it or have that feeling of dread about what the scales might show the next day for my indulgence! Of course, moderation is still the key no matter what we are eating. This cheese-cake has exceptional flavour and NO CRUST. I thought I would miss the crust but I didn't!
One for us to enjoy on maintenance for sure! Thanks for the recipe!
