Thumbs up Now this is easy and just devine!!

This evening I was a little tired and didn't feel like preparing my usual curry, so I weighed my chicken breast portion and hit it with a meat mallet to make it the thickness of a schnitzel. I then sliced some onion, chopped some fresh garlic, and picked some fresh basil leaves and weighed them (approximately 20gm from my vege allowance). I then tore off a piece of alfoil and sprayed it with olive oil spray, and firstly placed the sliced onion in the centre of the foil. Then I placed the chicken on top of that and rubbed and placed the garlic on the chicken. The basil leaves were then placed on top of that as well as some freshly ground black pepper. I folded the alfoil around the ingredients to form a nice little parcel. Cooked the parcel on the stove top in a frying pan for about two (2) minutes each side. The end product was fantastic- so moist and the onion had started to caramalize, so was so yummy. I served this with the remaider of my vege allowance which consisted of lettuce mix, cucumber, and tomato and a tiny bit of mayo. I will be definatley be making this one again, but next time I may just add some balsamic vinegar to the chicken for an extra kick!!!

sounds lovely, when I got some grilled fish from a fish shop recently I notice they did something similar. They wrapped the piece of fish in alfoil and cooked it in the sandwich toaster
