NYF Cohen's Recipe
Main Protein
Other
Recipe Name:
Veal Scallopini
Recipe Description
Quick and easy, can be used with chicken, or even beef as well. I know there seems to be a lot of steps, but it is actually quite easy and very tasty. I sometimes do the meat ahead of time, up to the coating in crumbs step and throw it back in the fridge until I need it.
Ingredients
veal, chicken, or beef
1 cracker (or 2 premiums) crushed finely
garlic granules, salt, pepper, paprika if allowed on your plan
bok choy
mushrooms
water/sprite zero
mayo *
Instructions
1. Slice protein into medium pieces, and pound into 1/4 inch thick slices.

2. Mayo can be used two ways:
-*spread onto cutlets to help spices stick
-added to mushroom sauce for creamier sauce

3. Sprinkle salt, pepper, and other spices on cutlet, then coat lightly with cracker crumbs. (I pound crackers in a ziplock bag and throw meat in to lessen mess)

4. Fry in sprayed oil til golden brown, does not have to be fully cooked. Set aside.

5. Fry mushrooms, and season. Add water or sprite zero. Boil for two minutes and add leftover cracker crumbs (that didn't stick to meat) to thicken sauce. *Add mayo if you didn't use it for meat.

6. Place cutlets back into sauce to finish cooking and to coat cutlets in sauce.

7. Pour over steamed or cooked bok choy.

I tried something very similar the other day. I added 2 teaspoons of psyllium husks to the cracker crumbs and added enough water to make it a little more sticky. It clung to the meat really well and meant I could save my mayo for the dressing. It made a really good crust that kept the meat inside moist!

LD - it only seems fancy but really, it's not. Definitely is a treat to eat though, especially if you use veal. So tender!

Dezzy, I am still waiting on the clinic's response as to whether or not I can use psyllium... It wasn't mentioned in my plan, and since the chili flakes snafu, I want to be sure first...

I'm not going to lie... I have never had veal.

Does it taste strong? I am always scared new things will be too strong. Or is it just like beef but more tender?

Actually, it looks like pale beef, tastes milder than beef, but with a beefy quality, and very, very tender. If you life beef, you will like veal.
