Sweet and Spicy Kangaroo
Recipe Description
Not many people here seem to be adventurous with the kangaroo meat so I thought I would add a recipe that I made for this cold winter night that really warmed me up!

Eating Kangaroo is a bit scary at first but it's good for the environment which is a plus!

From wikipedia: "basing agricultural production systems on native animals rather than introduced livestock like sheep offers considerable ecological advantages to the fragile Australian rangelands and could save greenhouse gas emissions."

This dish really complimented the stronger taste of the kangaroo meat and went down a treat!
Ingredients
diced kangaroo meat
cauliflower
onion
portobello mushrooms
fresh garlic
1 small red hot chilli
sugar free lemonade
balsamic vinegar
dried garlic granules
dried rosemary
salt, pepper
Instructions
1. Marinade thickly diced kangaroo in a small amount of balsamic vinegar with garlic granules and rosemary. Put to the side until later.

2. Finely chop the fresh garlic and chilli and add to a small pot with 1/2 cup balsamic vinegar and 1/2 cup of lemonade. Bring to the boil then simmer until the garlic is softened and cooked. Add more vinegar & lemonade or water if liquid levels drop too low.

2. Briefly steam or boil cauliflower to soften it slightly. Be careful not to overcook as we still want a touch of crunch after stir frying.

3. Over an extremely hot pan or wok cook the kangaroo meat - kangaroo can get tough if you over cook it so don't cook for too long.

4.Once the kangaroo meat has sealed and browned, quickly add the onion, mushrooms and partly cooked cauliflower and season with salt and pepper.

5. Once mushrooms and onions have softened add the garlic, chilli & balsamic sauce and cover the vegetables and meat. If the sauce is too thin add a teaspoon of psyllium husks to thicken slightly.
