Coconut Crack Bars
1 cup shredded coconut
1/4 cup agave or maple syrup ( or 1/4 water and stevia to taste) (I used 1/2 tsp maple syrup flavouring and the water) 2 TBS virgin coconut oil 1/2 tsp vanilla 1/8 tsp salt Whiz in processor and squash and freeze in a small square take-away container. Pretty yummy. Handy when you crave something sweet and are tempted to search your cupboards. Next time I am going to add cocoa or maybe a few chocolate chips, but nothing wrong with just the way it is.
