San Choy Bow
Ingredients: 125g pork (minced) 8g dried shitake (works out to more once it's rehydrated, but I didnt re-weigh) 30-40g bamboo shoots (canned) 30-40g water chestnuts (canned) Spring onion 1- 2 tbsp olive oil (recipe calls for peanut and sesame oil, but I only had olive) Stevia (or other sweetener) 1 tbsp Tamari Vegetable stock powder (optional) Garlic powder Ginger powder Chinese Five Spice Iceberg lettuce cups Spring onion and sesame seeds to serve. Preparation: Soak shitake in around 1/2 cup hot water. Roughly chop bamboo shoots, water chestnuts and spring onions. Roughly chop shitake, once they are hydrated and keep the mushroom water. Set aside. Keep half amount of chopped spring onion for garnish. Mix oil, tamari, stevia, a couple tbsp of shitake soaking water and a pinch of vegetable stock in a small bowl. Method: Brown minced pork. Add garlic, ginger and Chinese Five Spice, and cook for a further 2 min or so. Add spring onion and half of oil/tamari mixture and combine. Add shitake, and about half of the mushroom water, bamboo shoots and water chestnuts. Mix well. Add the rest of the oil/tamari mixture and stir fry for about 5 min. Serve in lettuce cups & garnish with spring onion and a sprinkle of sesame seeds. Enjoy! photo-1.jpg
