Mango Prawns (or Chicken)
:arrow: Green Prawn meat (allowance) :arrow: Tumeric, Ginger, Garlic Powder, a pinch of curry powder and dried Chilli flakes. :arrow: Mango (fruit allowance) :arrow: 1/4 cup water :arrow: Salad veges (allowance) i use Baby Spinach leaves, green pepper and mushroom. Weigh your green prawn meat place in a bag and add spices. shake bag to ensure good coverage. (you can do this the night before to add extra marinading time, or just before cooking) Lightly spray a nonstick pan with olive oil, heat, then add your prawns/ spice mix. stir till prawns are evenly changing colour then add 1/2 mango allowance. mix water in bag (that had prawns and spices in it) to get the leftovers and add to the pan with the mango and prawns. let simmer and reduce down to a chutney. Mix your up salad ingredients and the remaining fresh mango, then when your prawns are throughly cooked and mango has chutneyfied (new word!!) add to the top of the salad. Enjoy!
