Smile Crumbed Chicken & Zucchini Salad

Crumbed Chicken & Zucchini Salad


Recipe Description
Delicious, quick and will make your workmates jealous! 
Ingredients:
Chicken Breast
Zucchini
2 crackers
Basil
Oregano
Garlic Powder
Salt & Pepper
Mayo 
Preparation Steps:
Cut chicken into cubes
Cut zucchini into 2cm pieces 
Level of Difficulty:

Time Needed:
10mins 
Serves:
Serves 1 
Instructions:
Crush crackers and add basil, oregano, part garlic powder, salt and pepper to taste.
Crumb chicken in crumb mix and fry
When chicken is mostly cooked, add zucchini to pan and add remainder of crumbs
Whilst zucchini is cooking, mix mayonnaise with remainder of garlic powder and some pepper. Add a teaspoon of water and mix thoroughly.
Voila! Crumbed chicken and zucchini salad with aioli dipping sauce! This is absolutely delicious and the chicken tastes better than commercial chicken nuggets!

This recipe came into my mind today as I was contemplating the pack of chicken breasts waiting patiently on my bench while I decided how to eat today's chicken for lunch

And .... wait for it .... THIS WAS AMAZING!

Of course, I did my Crumbed Chicken somewhat differently to flutterby's recipe but that's what we all do with recipes, and flutterby is right about workmates .... with my New Job coming up, having a few lunch box type recipes is a priority. I can see that this recipe, cooked and chilled in it's tuck box the night before, would be almost the ideal Eat-At-Work meal!

And one Quick Tip from this recipe: Adding a splash to the mayonnaise allowance. Flutterby suggests adding a teaspoon of water to the seasoned mayonnaise but I added a teaspoon of White Wine Vinegar with a shake of dried Tarragon, mixed that around in the bowl before tipping in the cooked chicken & zucchini and this meant I could sort of lift the food around rather than my usual experience with dressing, being a blob in the middle and nothing remaining for the last few mouthful!

My Rating: Great, Mate, a tasty, quick & easy, very transportable chicken meal!
