Canned and drained tuna with raw mushroom and celery (allowance) and one orange (allowance) with a tiny bit of Sprite Zero as dressing, really refreshing and lasts a long time!

I had roast beef with lettuce tomato cucumber drizzled with balsamic vinegar it was yum.

My lunch was

Glazed beef with sweet chutney and fresh garden salad. Garnished with balsamic asparagus.

Curried chicken with asparagus, mushroom and capsicum. I have to admit though this this is something I have several times a week and really loved at first... now I'm so over it!

hey debs,

I had mini cracker pizza's with my cheese allowance. I use a ring of tomato on each cracker, a slice of mushroom and a couple of slices of green capsicum. I then nuke it for about 45 secs and it tastes like vegetarian supreme pizza. It's great. with the rest of my vege and cheese allowance I stuff whole mushrooms with capsicum and a little cheese and heat these up too. I save these as a treat cause I love them sooooo much!!!

I had fresh tuna and spinage and other stuff that I can't remember - but Debs - my wife wants to know if you are a seafood eater ??? - I think she has searched all the recipes looking for fish recipes - she likes your creations but tells me you are not a seafood eater as you have no recipes for seafood !!!!

HI Andy!

Your is wife is very perceptive!

I have a bad reaction to fish and so I don't eat it and I only have the one fish recipe...Garlic prawns...

It's a shame because seafood looks so nice and I'm told it all tastes different... I feel like I'm missing out on a massive variety of foods in life...

Someone once mentioned that if I ate freshwater fish it would be different but I don't know..

Hi Debs

I have been having the same lunch for a few days now. Chicken that is cute in small cubes spinach, mushroom, zuchinni,capsicum and onion. Str fried until it is all quite caramalised and then I deglaze the pan with quite a bit of water and season well and reduce. It makes a very delicious soup.

Thanks Debs,

I will pass that on to her - today she made me a chicken soup - I am not a soup eater at all but have told her she can make what she made today any day and I'll have it. My wife cooks for half the town oldies and she has gone to shower one of them so can't ask her where or what it was but it was very very good.

Thumbs up re" what did you have for lunch today

my favourite is lean meat, so I sliced up my lean fillet thinly, and stir fried it with onions and mushrooms, garlic, then I sauted it with our diet dry ginger ale to make a bit of a gravy sauce, then sprinkled a bit of S&P. yummy.

I had fish that was marinated in Sprite Zero and Balsamic vinegar with a salad of lettuce, onion, tomato, asparagus & cooked mushrooms. It was really yummy!

Some of your lunches sound really nice.... maybe tomorrow I might be more creative!

Lightbulb My salsa...mmm

I had a great lunch today! I made up my own homemade salsa and combined it with my cheese allowance.

I cut up half a tomato, my onion allowance and green capsicum then put in just enough water to cover the veggies in a small saucepan...added some mexican style spices, hot chili flakes, salt, pepper & parsley and a teaspoon of granulated hermesetas and boiled it down until all the veggies were a bit mushy.

Grated up my mozz and layered it in a bowl then put it under the griller for a few minutes and got the cheese all hot and bubbling...crumpled up my crispbread on top and WOAH it was so yummy. Even hubby said he wouldnt mind it!

I will only do this once a week though since I dont want to get bound up by cheese!
