NYF Cohen's Recipe

Zucchini Chips!
Recipe Description
Oven baked zucchini chips - much better alternative to a packet of greasy potato chips!!

Orginignally found via Pinterest on the Vittles and Bits Blog - so thought I would link in here to make it easy for others to find!
Ingredients
Zucchini
Olive Oil Spray
Flavouring eg. Salt, Paprika, chilli, herbs etc
Instructions
1) Preheat oven to 100deg celcius
2) Line baking sheet with foil and spray with some olive oil spray
3) Finely cut your zucchini - either with a knife, cheese grater slicer or a mandoline - want to be just a couple of mm thick
4) Lay on foil and give them another spray of oil and then sprinkle your choice of flavouring on top
5) Put in oven for around 45mins and then check and rotate tray and bake for another 30-50mins until all dehydrated and crisp!

For an idea on serving size - I measure before I cook and the picture below shows 50g of Zucchini

These are so yummy! I tried them last night and they were so good I had some with lunch today too!! Easy peasy. Would be great for kids too - my partner thought they were tasty as well!

Glad they are a hit! Was going to make tonight to have with fish - but didn't get home until 6pm... and couldn't wait that long for them to cook! Not sure how well they would store...

Next goal - 15 kg lost!

I have terminal obesity. It's not going to go away. I have found a wonder drug that has controlled my condition and reduced it. Once I finish this treatment I will be in remission. I need to stay vigilant and make sure I don't lapse back into the old habits or else my condition will reappear. (Found in the GEM part of the forums - Love it!)

OMG am totally making these right now - hope they don't quite take that long to be ready though.....was due to eat anytime after 1pm (ten mins away) so might have a later dinner.....hmmmm later dinner, means enough time to bake these chips for dinner tooo!!!!! OMG! Hope they turn out as awesome as everyone else's!

No worries - I fan baked them, so cut the time down to just over an hour - they shrank a lot though..............I am definitely going to bake these in maintenance and use them if I have a craving for potato chips! They were tasty as - and I might make some more for dinner, now that I have to wait till 7pm for dinner. I just sprinkled a wee bit of garlic and then a bit of salt - loved how crispy they went - just like chips!
