NYF Cohen's Recipe
Main Protein
Egg
Recipe Name:
Cloud Bread - OP friendly
Recipe Description
egg based meal that can be used instead of bread
Ingredients
1 salada/premium or equivalent (2 small squares)
1 egg, separated
1/4 tsp vinegar
1/8 tsp salt
10 mL boiling water
Instructions
Whip egg white with vinegar into very stiff peaks

Grind salada very fine, like flour (I used my coffee grinder)

Beat egg yolks, then with beaters running pour in the boiling 10 mL water SLOWLY. It should be very foamy, like bath bubbles.

Add the salada and salt with the egg yolk and beat again.

Fold 1/3 of egg white into egg yolk. Fold in the remainder white into yolk

Mound onto baking paper, make one or a few.

Bake at 150 deg C for 30 to 40 minutes, until golden brown, and crispy to the touch.

Cool in the oven.

Put into a container or bag overnight. It softens up overnight, and becomes more 'breadish' you can leave this as savoury and add herbs, or add sweetener and flavouring eg cinnamon, lemon, orange zest etc.

The water MUST be boiling or it will create a curdled look to the bread, still tastes fine though.

Don't flatten too much, they do sink.

They taste great, versatile, and can be frozen.

I just did 'blobs' today CB, but yep, you can make muffin styled ones with too...put them into the patty pans first...if you spray the paper liners with oil they dont stick as much. Just maybe do 20 mins and see how they go, I filled my others batch to the top of the liners so they puffed up over the top, but they do shrink a bit too

Yay they did puff up. I've done plain in muffin trays and they look and smell Devine. I now have cinnamon flavoured flat breads in the oven. Oooo I can't wait to taste! Thanks Ciors ill have to post some pics for you in my albums as it doesn't let me post in my posts anymore!

So when you make more then 1 - I guess its best to use one serving of ingredients at a time - to ensure there is just 1 egg per bread?

Yes...1 serve will make a pizza based sized bread, or you can make a few smaller ones. I just thought that while OP, it's probably better to make one serve, so you know exactly how much of what you're getting

Thanks for that Ciors! Will have to give them a whirl on Friday for a change for the weekend breakfasts - think I have had the egg option only 3 times so far!

Glad you liked it CB! Sometimes I think my taste buds are weird lol

Just want to add that I always use baking paper to prevent sticking, and that it's best to carefully release them from the paper with an egg slice/spatula before cooling...they get very soft upon cooling and difficult to move...I also store only one in a bag, or I wrap in baking paper and store in a containter to stop them sticking to each other.

Hmm, is this best eaten hot? I'm heading away for work for a couple of days, boondocks, no cooking facilities, trying to think up meal optons that will be ok?!? Sounds scrummy tho!

The texture between hot and overnight cold is very different, hot it's kinda like meringue, cold it's more breadish...it was nice warm too though but I've mainly eaten it cold

My first batch didn't turn out very good as I botched the recipe a bit. The second time I added grated zuchini to it so that its a meal all-in-one so that it could be taken with me on a trip for breakfast. It turned out really great, so perhaps experiment a bit with add-ins to your own taste. Many thanks for the recipe!

I made this for breakfast and loved it, I have only had it hot but plan on making it and having it cold, I also was going to add in extras to see how it turns out.
