Prawn Balchao (Indian Meal)
I make up a family portion so others will need to adjust for their allowances, just follow the directions more than quantities!! Those on refeed and beyond could add rice or roti and veg. I use cauli, cabbage, carrot. Basic recipe uses 1/2 kg prawns Rub some salt and Tumeric on prawns and leave 5 mins. Make a paste of 1 tbsp Garlic and Ginger (!/2 each) 2 dry red chillies (or to taste) 1 tbsp vinegar 1/2 tsp tumeric 2 tsp cumin seeds 1 tbsp mustart seeds 1 tsp black pepper I use a bamix to mash it up. Wash the prawns, dry them, then add paste and leave to marinade. Sauce Sprig curry leaves 2 onions finely chopped 4 tomaotes( I use 1 tin) Sugar(Sweentener), Salt and vinegar to taste Spray pan with EVOO Quickly heat a sprig of curry leaves then add onions and fry over med heat till light brown. Add tomaotes and saute till everything is really soft and mixed together Add prawns and marinade and fry briefly. Add 2 green chillies and sugar salt vinegar to taste Put lid on and simmer 10 mins on low. Enjoy!! Seems like a lot of work but the taste is great, even better the next day!! |
