Default Laura's Recipes (",)

With all of my recipes I know there arent actual measurements, cooking is all about what you enjoy and what you want to eat, so ill try and put some rough measurements, but while youre cooking you choose how much or how less you want to add.(also your allowance) I don’t cook from recipes, I only get ideas then I put my little touch on them, then trial and error until I finally like what im eating!

if you guys have any questions just ask away, ill try and post some more when i have a little more time on my hands (or when im waiting for my next meal )

Default Something Sweet

Ricotta
Grated Lemon Zest
Cinnamon
Nutmeg

Mix Ricotta, a little lemon zest, a pinch of cinnamon and a pinch of freshly grated nutmed. I enjoy mine with a few drops of lemon juice but totally optional. Refridgerate until you’re ready. I have never tried this with crackers but i used to eat this before i started the program, just me and my spoon!

Default Funghi al forno - Oven Mushrooms (Sounds sexier in italian)

I know there are a few threads with recipes on mushrooms (great to see) but I just wanted to add, the mushroom doesn’t have to be the main meal, choose a main meal, poultry or meat, try including the mushroom as your veg allowance and it will definantly keep you satisfied and your meal will look twice the size!! (Well for me anyways!) Especially my first few days when i was missing big portions of food!

Portobello Mushrooms are great because they are very light, and when cooked right it can totally change the flavour or the mushroom. It’s like eating a steak.

Portobello Mushroom
Fresh Parsley/Thyme
Fresh Chilli
Garlic
Oil or Oil Spray (I use extra virgin o/o, I know were supposed to use spray, but this is something I have grown up on being italian, and even if it slows down my weightloss I couldn’t use something in a spray can, No offence! When I use it I use the same as anyone would with a spray I just wipe it away. So its totally up to you what you want to use for this!!)

Your mushroom will be your main veg besides the herbs and garlic so maybe weigh it to be 95% of your allowance. Make sure you remove the stem as that will definantly eliminate a good 5gs. Now depending on how much you like, chop the garlic, chilli, thyme and parsley together, the garlic and chilli you may want a little smaller than the herbs, now just roughly put them on the inside of the mushroom and spray with oil or as I would drizzle with o/o.

Next just place them in a 180 -190° oven for about 20 mins.

Hi PD

I'm with you on the oil spray, I checked them out and they're propelled by butane and other nasties that I don't want near my food. I use organic olive oil and have a special silicone brush. I use a drop of oil and spread it with the brush and I'm happy.
