I've been getting so much inspiration from the site, thought I'd share some of the foods I'm really loving at the moment. |

Taco's cohen style
Minced beef (steak minced so no fat) Onion Capsicum 1/2 tomatoe (deskinned) Pepper Salt Paprika Garlic powder Cumin Saladas (2 cracker allowance) Chop the onion finely and cook in a pot with some spray oil. Once slightly browned, add the finely chopped capsicum. Once cooked and tender, add the mince meat and spices. I recommend a shake of each, except for cumin, add two shakes. Add the chopped tomatoe (without skin), and approx 2tbs water. Allow to cook down to become a moist taco looking mix, not to dry however, but not too wet (should not be water on bottom of pot if you move the mix to the side) Serve in a bowl with salada's on the side. I eat about half the mix plain, then with a soup spoon, spoon enough mix to cover a small salada square and pop it all in my mouth. YUM YUM |

Steak with Mushrooms
Steak with Mushrooms
Steak Garlic clove Mushrooms This is a simple one, but a yum treat with garlic. Cook the steak in a fry pan with a little spray oil. Once one side has cooked through (should be about 5min or so) turn the steak, make sure the pan is HOT, add the garlic and mushrooms. By adding the mushrooms to a HOT pan, you should get some browning on the mushrooms before they release their water. Indian inspired beef
Beef strips Onion Capsicum 1/2 tomatoe (chopped, no skin) Celery (optional) Indian spice mix (psuedo garam masala) Cumin Pepper Cinnamon Ginger powder Ground cloves Chili powder (optional) White vinegar Water Cook beef in hot pan with spray oil until browned. Add onion and allow to brown slightly. Add all other vegetables (full allowance) and allow to cook. Add spices whilst vegetables are cooking, a shake of each should suffice, and add a dash of vinegar (approx 1-2 tbs) and the same amount of water. Allow to cook down for 1min or so, to allow water and tomatoe to make a sauce for steak. Plate, and enjoy! * Also works well will full peice of meat, although I use strips purely for speed |

Sweet chilli sauce
Sweet chilli sauce
2tbs Water 3tbs White wine vinegar Chilli flakes (to taste) 1/2 Sweetner (if you can get a sachet, use half) This can be made in any amount, but the directions will make enough for 1 serve. I've often made a larger batch and popped in the fridge as it makes a great salad dressing also. Cook in small pan and allow to bubble for approx 1min. You might want to turn the exauhst fan on as the chilli can make you cough. A great sauce for steamed fish! |

The tacos is a bit like a recipe that I found in ConnieK recipes. It is my all time favourite and I have it several times a week. The indian beef sounds delicious and I will definately be trying it this week. Thanks. Rach |

Beef stir fry
Beef strips Red wine vinegar 1/2 tomatoe (chopped, no skin) Onion Capsicum Spinach Celery Salt Pepper Brown beef in pan with spray oil. Once beef browned, add onion and allow to brown gently, add other vegetables except tomatoe and spinach. Allow vegetables to soften, add tomatoe and salt and pepper and good slurp of vinegar, cook, and add small amount of water if required to make mixture moist. Just before serving, add spinach, allow to wilt, and serve. |

Hamburgers
Minced beef (steak minced so no fat) Salt Pepper Paprika Tomatoe relish 1/2 tomatoe (chopped, no skin) Onion Capsicum Celery Balsamic vinegar Mix beef and spices together and form hamburger patties (my allowance makes 2 regular size rissoles but I make 4 small normally) Cook in hot pan with spray oil, and wait until one side is cooked and the patty is cooked half way through before turning as this will stop the patty breaking. In a small pot, cook the sliced onion in a small amount of spray oil and allow to brown (add water if required to stop sticking to pot) Add finely capsicum and finely celery and allow to cook through until soft. Add tomatoe and generous slurp of balsamic. Cook in pot for approx 5 min adding water if required to keep moist. Serve your patties on salads and top with relish. I like to serve mine on a small salada square (which is why I make 4) as I have found making two and using a salada top and bottom of the patty just makes the relish fall out. *if you don't like the sharpness of balsamic, use half balsamic and half red wine vinegar. |
