Default Chicken Rissoles - Suitable for Christmas!

Well, I cooked this quite by accident.

I was looking forward to hamburgers http://newyouforum.com/forum/showthread.php?t=6541 (I figure that I had better make use of the mincer thingy) but when I opened the fridge Mike had frozen the beef in one piece.

So I defrosted a chicken portion, and:

Minced the chicken, mixed with
2 powdered Salada quarters
decent slosh white wine vinegar
finely chopped spring onion / shallot
few shakes of *thyme *mixed herbs *curry powder * salt *black pepper

pressed into 2 egg rings, put in fridge

Dry fried these on low heat in the wok (kept in rings to keep shape), tipped pan slightly and in the low side of the pan, heated through Logan Farm spinach and sliced fresh asparagus sprinkled with nutmeg.

Plated with the remaining half a Salada to nibble and crunch


This looked, smelt and tasted great! Just like roast chicken with stuffing!!

For a festive meal, perhaps include two thin slices fried tomato to put on the rissoles when turned. The plate would then have white, green and red! Or a bit of Cohen's friendly plastic Holly on the side!!


The thyme and mixed herbs gave this meal a really festive fragrance and taste. By pressing the mixture into two rings (and not three as I had done with the hamburgers) the rissoles held together better. They would even be nice cold!

Hope this helps anyone trying to think up something special for Christmas!
